Recipe: Parker’s Scandinavian Almond Cake

A Swedish neighbor shared this recipe with me. Requiring only a few common ingredients, it’s easy enough for even the most novice baker. The fluffy texture and light, sweet flavor make this cake an A+. You’ll wonder how something so simple can taste so darn good.



1 cup butter

1 cup sugar

2 cups flour

2 eggs

2 tsp. almond or lemon extract

1/2 tsp vanilla extract

A pinch of salt

1/2 cup almonds, chopped up



1. Heat oven to 350 degrees F. Cream butter and sugar.

2. Add eggs 1 at a time, beating well after each addition. Add almond extract and vanilla.

3. Mix together flour, almonds, and salt. Add to butter mixture & mix well. Transfer into a narrow, elongated pan for baking.

4. Bake 45 minutes and let stand for 5 minutes. Invert pan to remove cake.
